Breakfast: We were having Vanilla Tea with Soy Milk while asking that popular question, “What shall we have for breakfast?” I said, “How about Corn Thins?” Gary’s eyes lit up. This really happened folks. We love Corn Thins, especially with Peanut Butter and Apricot Butter. It’s a favorite early in the day or late at night. Pink grapefruit goes well with everything.
Lunch: Leftovers for lunch including Quinoa and Sweet Potatoes. This Carrot Lentil soup Gary made with added Celery is spectacular. I kept looking up and saying, “This soup is so good.” This really happened folks.
Dinner: We were meeting Leslie and Joel at Le Botaniste for dinner. I’ve known Leslie most of my life – our parents are lifelong friends, and I met her husband Joel in high school. It was great to get together, catch up as well as discuss with disbelief and despair the current U.S. political state of affairs. Gary and I got there first and we ordered drinks. I got one of the detox juices with Carrots, Grapefruit, Turmeric and Black Pepper. Gary had the Peak Organic IPA.
Le Botaniste is a fun space with a creative plant-based menu, some of the “large bowl” options are presented in our favorite Le Creuset pots.
Check out the menu items, or prescriptions as they are called.
I ordered the Botanical Salad and a Green Pea Mint Hummus to share.
Gary went with the Pasta al Mafiosi.
Evening: We got back to the apartment and hit the computers to get in a little more work before calling it a night. I made some Ginger Chili Tea.
Then I said, “What shall we have for a late night snack? How about Corn Thins?” Gary’s eyes lit up. This really happened folks. The day began and ended with our favorite treat. Corn Thins, Peanut Butter and Apricot Butter. Life is good.
