What Vegans Eat – Day 69

Breakfast: We’ve turned the apartment into a practice theater to prepare for the Happy B’Earthday Revue. There is little time for anything else now. We are getting low on fresh food, and being without a car, we are making do with what we have, which is really still a lot. There was oatmeal, but no fruit. I’ve mentioned before how I never tire of oatmeal and thought about preparing a simple oatmeal with just coconut milk. All at once an old oatmeal memory came back to me. I was traveling a lot to Seoul back in 1999-2000 as an engineer. I would stay at the Ritz Carlton. All of the hotel staff called me Mr. Hartglass! I’d be greeted every monring in the elevator with “Good morning Mr. Hartglass.” The dining room had an amazing spread of food and I ate a lot. They had oatmeal only it was made with milk. I had to explain to them that oatmeal is often made with water and then the milk can be added to it, if desired. They offered to make me oatmeal with water and I accepted. They would do anything for you. This morning I cooked my oatmeal with coconut milk. I had it with English Breakfast tea.

Snack: When there’s no time to make a meal a handful of raw nuts will hold me over until dinnertime. I enjoyed some raw cashews.
 
Dinner: We cleared out all the leftovers: Lentil marinara with collard greens, Sweet Potato Broccoli Curry, Burger bun, Corn tortilla with a green juice of Kale, collards, Celery, Carrots, Lemon, Lime
