What Vegans Eat – Day 782

Breakfast: Today is the 10th Annual VeggiePride Parade and Rally. Hooray! Gary and I will be tabling for REAL and I’ll be giving a talk. I knew it would be a long day talking about food, and not eating any. I decided to make our newest pancake recipe, Late Night Corn Pancakes and see how they would hold up for breakfast.

 
They were beautiful! Gary had his with Maple Syrup and I topped mine with warmed Blueberries.

Lunch: After a very long, but lovely day at Union Square for the VeggiePride rally, we were so hungry! We walked to the East Village to Caravan of Dreams for a very late lunch/early dinner. We have not been there in ages. We began with Green Juices. They make a perfect blend at Carvan of Dreams.

I ordered the Raw Watercress Salad with house sauerkraut, carrot, sunflower sprouts, avocado, Indonesian dressing. Yum!

Gary had the gorgeous Applewood Smoked Tofu Sandwich with sautéed artichoke hearts, caramelized onions, mustard, romaine, and pickle. Gary requested Ciabatta bread over Whole Wheat Toast. Our server was very nice and accommodating.

We relaxed and discussed the day over hot drinks. Gary had a Chai Latte and I had the Grain Coffee with Almond Milk.

Dinner: It took a while to get home. I was exhausted but hungry. Always hungry! Gary made me a comforting meal of Roasted Tofu, Red Cabbage Slaw with Sesame Seeds and Tahini Dressing and Mac & Cheese. This was a treat.

Evening: Last but not least, we shared a pot of Almond Vanilla Rooibos Tea.
