Breakfast: It looks simple, but this is actually one of our favorite kinds of breakfasts, or dinners, or snacks! We LOVE Corn Thins. I put Sesame Tahini and Apricot Butter on mine, Gary goes for the Peanut Butter. The meal is complete with Pink Grapefruit and Bai Mu Dan White Tea.
Daily Green Juice: Kale, Collards, Red Babbage, Celery, Ginger, Lemon
Dinner: Yesterday’s dinner was so good, we had it again. First course – leftover Mac & Cheese. Say CHEESE! Cashew Cheese. Creamy, Rich, Gooey, Perfect.
Gary made more Roasted Tofu with a different spice mix. We also had some leftover cold Roasted Tofu. The cold version was our dark meat and the hot, fresh version was the white meat. Both were great. He made another Red Cabbage Salad, this time processing the cabbage into smaller pieces and tossing it with a Cashew-based dressing.
Evening: Teeccino is a treat, especially with froth. Have you tried one of these little battery-operated frothing units? They turn our simple Soy Milk into perfect Foam for our Teecino. Just add dust. Cinnamon Dust that is.
Gary set out a little Fruit/Nut and Chocolate Bar with Figs, Dark Chocolate, Cashews, Brazil Nuts and Walnuts. The figs were AMAZING, creamy, sweet and moist.
