Listening to Dr. David Katz, the first speaker at the Food Revolution Summit today. I was on the Dr. Oz show back in 2007 when Dr. Katz was on the show that day. I also interviewed him a few years ago. You can listen to that here. I tuned in, with my new favorite breakfast – Rolled Oats, Cacao nibs, Raisins, Walnuts and the last of the Cashew Yogurt my friend Linda Long made for my birthday. That Cashew Yogurt lives on in the Almond Yogurt I just made. Gary made me a cup of Teeccino with his fabulous frothy soy milk, dusted with cinnamon. This is the good life!

Lunch: Who doesn’t love Chinese Food leftovers? We had a lot from our dinner at Green Zenphony yesterday. I really love the Stuffed Squash. It may be my new favorite at this restaurant.

Dinner: No, we didn’t forget Cinco de Mayo, commemorating the Mexican Army’s unlikely victory over French forces at the Battle of Puebla, on May 5, 1862! We celebrated our Mexican-American culture with tacos. This is one of my favorite meals! Gary made a fantastic Guacamole, subtly seasoned with Cilantro and Cumin. He made a fresh tomato salsa, and corn salsa too. The other choices were freshly cooked black beans (Gary kept saying they smelled like chocolate), shredded Romaine Lettuce and my Almond Yogurt which I think is better than sour cream. These tacos are gorgeous! Here was my first one.
