Breakfast: I was served the fully loaded, luxurious version of my new favorite breakfast bowl. It had Rolled Oats, Apples, Bananas, Dried Apricots, Raisins, Frozen Strawberries, Frozen Blueberries, Shredded Coconut, Pumpkin Seeds, Flax Seeds and Almond Yogurt. It took a long time to eat and I enjoyed every bite.
Daily Green Juice: Kale, Collards, Celery, Carrots, Ginger, Lemon
Dinner: Our breakfast meal stayed with us all day. But when it was time to have dinner I was really hungry. I thought having the remaining Seaweed Salad from the Japanese Meal we ordered in a few days ago would take the edge off but it made me even hungrier.
Gary had a special meal planned. A few days ago he had poured off the peanut oil from the top of a newly opened peanut butter jar and I suggested saving it to cook with. We don’t cook with oil very often, so when we do, it’s a treat. And tonight I was served a treat. He made an extra secret spice mix and used some of the peanut oil to coat Tofu Slices before baking them. We called it Fried Chicken! It was so good. I like to eat one thing at a time and I saved it for last because I knew it was going to be good. We also had Baked Potatoes with Kite Hill Cream Cheese and Chives, A Romaine Salad with Tahini Dressing and the leftover Spaghetti and Tempeh in Spicy Marinara from yesterday’s dinner.
After a long day of work, a glass of wine sounded very fine. We have a few bottles of organic OKO Pinot Grigio that Gary bought for my birthday party and never tried. It was time to try it. It’s a lovely, fruity, crisp white wine.
Evening: When you have Frozen Raw Vanilla Cream Oatmeal Cookies in the freezer they call to you every night. We had some for dessert.
