Breakfast: Gary’s Birthday Week Celebration is in process. He wanted waffles and I made them. We have many waffle recipes and the choice depends on the flours we have on hand. I made Buckwheat Waffles, with buckwheat flour made by grinding buckwheat groats in the Vitamix. I am never buying buckwheat flour again! This is so much better, fresher and more flavorful. I made a quick Blueberry Compote which swirled beautifully with our Almond Yogurt.

Lunch: Feeling famished, I made a soup of leftovers: Cranberry Beans, Brown, Black and Red Rices, and Mushrooms. Gary enjoyed another Buckwheat Waffle with his favorite toppings.

Daily Green Juice: Kale, Collards, Celery, Carrots, Lemon.
 
Dinner: We met up with Rachel Atcheson, Ariela Rubin, John and Chris Phillips at VSpot in the East Village. I ordered the Arepa topped with Tofu, Beans, Plaintains, Avocado and Salsa.

The Burrito Birthday Boy had the VSpot Burrito with Ground Seitan Carne Molida, Guacamole, Brown Rice & Peas, Vegan Cheese, Peppers, Red Beans, House-Made Vegan Sour Cream & Pico de Gallo.

Ariela ordered the Quinoa Curried Kale with Organic Ginger Quinoa with Organic Tofu, Sauteed Coconut Curried Kale, Chickpeas & Shredded Carrots. She sat next to me and I eyed her plate thinking that’s my dish for the next time.

Chris got the Lasagna, layered with House-Made Cashew Ricotta, Vegan Meat Sauce, Vegan Mozzarella, House-Made Marinara (Cooked with Kosher Wine); Served with a Side Salad.

Rachel had the Portobello Salad with Grilled Mushrooms, Candied Pecans, Housemade Cashew Ricotta Cheese Crumbles, Tomatoes, Sauteed Onions, Sesame Ginger Dressing served atop a Bed of Mesclun Greens.

John ordered a collection of “Dr. Fuhrman-approved” sides and showed his plating prowess by beautifully presenting all the dishes together on one plate.

Fortunately Gary ordered a Carrot Cake for dessert and I was able to tell the server to slip a lighted candle on top. The Birthday Celebration continues!

Vegan activists and delicious vegan food, a great combination. It was a fun evening with my old friend John, his partner Chris, meeting Rachel Atcheson and learning about her work at Mayor De Blasio’s Community Affairs Unit, and getting to chat with Ariela Rubin, who I’ve seen at many veg events but never had a chance to hang out with.

Evening: After a lovely evening, I wanted to prep some food for tomorrow’s breakfast. I’ll be making Del Sroufe’s vegan Donut recipe from his new cookbook. I baked some Sweet Potatoes and made Date Purée. Then I had a couple of Sprouted Corn Tortillas with Kite Hill Cream Cheese and Chives. Gary was waiting to have a piece of one of the baked Sweet Potatoes but fell asleep before they were ready.
