Breakfast: It’s Saturday. We don’t have a normal work week with weekends off, but today was different. We were going to relax. We had tea and read the New York Times. I started reading Climate of Hope, for my Tuesday interview with co-author, Carl Pope. It’s an inspiring book and I was happy to read it. Most of the “news” in the paper these days is so depressing. It was good to read the stories about businesses and government doing good things for the environment and for humanity. Afterwards we made a quick and simple breakfast of Corn Thins with Peanut Butter, Sesame Tahini, Almond Yogurt and Apricot Butter.
Daily Green Juice: Kale, Collards, Celery, Carrots, Red Cabbage, Lime.
Dinner: Our friends Eytan and Rosie were coming for a visit. We had not seen them in a very long time. We made a simple table of foods to nosh on while we drank wine and chatted the evening away. We had Mixed Olives, Figs, Dates, Almonds, Carrot and Celery Sticks, Tofu Chive Sour Cream, Roasted Garlic and Onions, Kite Hills Cream Cheese with French Bread and mini Bagels, Field Roast Sausages cut in small bite size chunks and Roasted New Potatoes. We served OKO Malbec organic wine and our own vintage of bottled distilled water.
