What Vegans Eat – Day 843

Breakfast: I like salad for breakfast especially when it’s already made. Kale salads are great for so many reasons and one of them is that they hold up nicely for a couple of days, when already tossed with dressing. Make a giant salad for dinner and save some for breakfast. I should do this more often. Afterwards I joined Gary with some Corn Thins and I topped mine with Almond Mozzarella Cheese with Sundried Tomatoes.

Daily Green Juice: Klae, Collards, Celery, Carrots, Red Cabbage, Lime.
 
Dinner: We had a very early dinner or a very late lunch. Mealtime happens when we are hungry. Fortunately, Gary and my tummies tend to be in sync. We are so busy, meals are simple and I love eating this way. We had Black-Eyed Peas with Nutritional Yeast and Almond Yogurt.

Evening: Since we ate so early, and didn’t really eat a lot today, we treated ourselves to Air Pop with Nutritional Yeast. We buy mostly all organic food here at home. Corn is one of those foods we highly recommend be organic, to avoid consuming the genetically modified varieties.
