What Vegans Eat – Day 842


Breakfast: I am sensing a pattern. When we are low on Oats and fresh produce and it’s time to do some online and neighborhood shopping, I make Polenta for breakfast. I can’t explain why I typically wait to be out of Oats before I reach for the polenta but that’s what I do. And we love Polenta Cereal for breakfast. This time I cooked it with an Apple and some chopped dried Apricots and we topped it with Walnuts and homemade Cashew Milk.
Dinner: It’s sushi burrito night! We had cooked Black Eyed Peas today. Gary sautéed Red Cabbage, Carrots and Onions to our leftover Brown/Red/Black Rice Mix and mashed some Avocado. I put them in a Nori sheet and rolled them up. We also used Sprouted Corn Tortillas.
I I made a big Kale Salad with Tahini Dressing Shredded Red Cabbage, Grated Carrots and Red Onion.
Evening: I was working behind the scenes during the Healthy Eating Power Hour. Afterwards, Gary made us Strawberry, Banana, Cashew Milk, Vanilla Shakes.
