Breakfast: Gary’s new morning ritual consists of making Teeccino with Soy Foam. It’s his indulgence since giving up caffinated beverages. He made me Ice Teeccino with Soy Foam for breakfast, a cool treat on a hot morning. Especially good served with the last of our Doughnuts.
Lunch: We’ve been going on long walks. Gary does one almost every day and sometimes I join him. When we got back, I made “Cheese Sandwiches” – Corn Thins with Tomatoes and Almond Mozzarella Cheese.
Since it’s been so hot I have been craving a Vanilla Thick Shake while walking. We got home from the walk today and after our sandwiches I made the shakes. So simple, rich and fantastic – made with Bananas, Coconut Milk, Vanilla and Ice. Our coconut milk is made with Let’s Do Organic Coconut Cream. The 7 ounce package recommends blending the cream with double the water (14 ounces) to make milk. When we first started doing this, I would simply add 2 cups or 16 ounces. Then Gary thinned it by add 3 cups of water to the 7 ounces of cream. Now he adds almost 8 cups of water and the coconut milk still tastes great. It lasts a lot longer and has a lot less calories. This shake was just what I was craving.
Daily Green Juice: Kale, Celery, Carrots, Lime, Ginger
Dinner: We had a light meal of Tofu Masala.
Evening: It’s still hot outside and cool Cantaloupe is a nice evening treat.
