What Vegans Eat – Day 894


Breakfast: The rain has brought relief after several days of brutal heat. Somehow we endured and only turned the air conditioner on for one night in the bedroom. What a luxury it was! But we are feeling the fatigue from less than ideal sleep. Breakfast was cool and simple: Rolled Oats, Cacao Nibs, Raisins, Bananas and Coconut Milk. I added a little Cherry Juice concentrate to my cold-brewed Chamomile Lemon Tea.
Lunch: I cold-brewed some Teeccino which I knew would be delicious with Coconut milk. It was! Gary preferred Soy Milk in his.
Next up was a fresh, chewy, Kale Salad with cooked Millet, Red Onions and Tahini Dressing.
Daily Green Juice: Kale, Collards, Celery, Carrots, Lemon.
Dinner: With the heat wave now over, Gary used the oven to make Baked Fries and Sweet Potatoes and we heated the Carrot Lentil Soup. It’s good hot or cold.
Evening: We scored the other day at a nearby local market that had organic strawberries, grapes and pineapple at great prices. Today we enjoyed the Pineapple.
