Breakfast: Breakfast can be a beautiful work of art. Isn’t this breakfast bowl of Rolled Oats, Coconut Milk, Bananas and fresh, organic Strawberries stunning? Even better when topped with homemade Cashew Yogurt, served with a cold-brewed Jasmine Tea.
Lunch:
Today we’re celebrating my nephew Noah’s and sister-in-law Jennifer’s birthdays at their home upstate near Brewster, which is about an hour and fifteen minutes by car from our apartment here in Queens. My parents picked us up and I drove from there. With heavy traffic it took us about two hours. It’s a scorcher today and so we were served a cool beverage by my niece as soon as we walked in the door. She handed us each a delicious thirst quenching drink, sweetened naturally with fruit, called Izze Sparkling Juice. They are good, but I think the family likes them most because it puts a smile on everyone’s face to remember grandfather Izze, who often said, “Well, I’ll be Doggone.” Crunchmaster Original Flavor Chips and Guacamole were also served with our drinks.
Lunch was served. Here’s my colorful plate of several salads, which included fresh ingredients from the local farmers.
Ice cream birthday cake was served with Watermelon Slices and a big bowl of Strawberries and Blackberries. The vegans were happy with the naturally sweet Watermelon and Berries, which I personally think are the tastier options.
Daily Green Juice: Back at home after a long drive, we had our Green Juice with Kale, Collards, Celery, Carrots and Lemon. And we snacked on organic red grapes.
Dinner: Dinner began with a cool and crunchy Romaine Lettuce Salad with Red Onions and Tahini Dressing with a little Yogurt mixed in.
I had a small bowl of chilled Carrot Lentil Soup (it’s good cold!) and some Millet topped with more Tahini.
