What Vegans Eat – Day 892


Breakfast: I love our Breakfast Bars. Today’s Breakfast Bar consisted of Rolled Oats, Blueberries, Strawberries, Cacao Nibs, Raisins, Soy Milk, Soaked Chia Seeds and Cashew Yogurt. I also prepared my cold-brewed teas. Today’s flavors are Vanilla Black Tea and Chamomile/Lemon.
Daily Green Juice: Kale, Collards, Celery, Carrots, Lemon
Dinner: What you can’t tell by this picture is how big these salads are. The plates are 15 inch chargers. These are BIG salads. They are similar to what we had last night, with Kale, Romaine, Black Beans. Red Onion Tomato, Walnuts and Tahini Dressing.
Evening: It’s been a very hot day. I wanted something cool. I made Vanilla shakes with Coconut Milk, Bananas and Vanilla. Our coconut milk is exceptionally light but tastes wonderfully rich. We take a 7-ounce package of Let’s Do Organic Coconut Cream, pour off the oil and blend the “meat” with about 8 cups of hot water to make the milk, then let it chill in the refrigerator. (I use the oil for oil pulling, or putting on my skin). Then I took about 3 cups of milk, two frozen bananas and vanilla extract and blended it together. It was so sweet. Gary made Air Pop.
