I got up early. It was early for me, at 7:30am. I had slept over my parents home and had a lot of things to do. First, I wanted to do some food shopping, on my own, for what I needed. I was at Trader Joe’s by 8:30am and got almost everything on my list. Then I went to a vacuum cleaner store that opened at 9am to pick up the belt that the house cleaners discovered was broken on my parents’ vacuum cleaner yesterday. I got back by 10:00 and sat and had a cup of green tea with my mom who was just starting her day. Then I rushed out to swim in the pool at their club house. I love lap swimming and wanted to make sure I did some while visiting. I thought I was going to swim yesterday but that didn’t happen. We spent most of the day sitting and waiting. I wasn’t going to let that happen again.
Lunch: When I got back from my swim I was going to take my mom shopping for food my parents wanted on their list. I was hungry! I managed to take a quick shower and vacuum down a bowl of Rolled Oats, Almond Milk and Blueberries by the time my mom was ready to leave.
Dinner: After shopping, I needed to get back home. Gary and I were going to prepare some dishes for my mom’s birthday party tomorrow. Gary was going to make the Red Pepper Hummus. We had soaked some garbanzo beans and he was cooking them. Then he told me he accidentally stirred the beans with a spoon he used to make his morning cereal with Oats. He was frustrated because he knew he couldn’t use the beans for the hummus any more. All the food we brought to the party had to be gluten-free. The Oats we have are not certified gluten-free and Oats sometimes have small amounts of wheat in them, because the wheat fields grow near the oat fields. I told Gary not to worry, we had a can of Garbanzo Beans we could use for the hummus. The good news is that we got to eat those freshly cooked beans. First I took a bowl and topped it with Tahini Dressing.
Then a little later, Gary made a dish using the beans along with Spinach and Onions.
Evening: After eating we took turns in the kitchen. I made a Raw Fruit Tart and cooked the cake layers that would become my mom’s birthday cake: Raspberry Vanilla Cake with Swiss Buttercream. Stay tuned for how that turned out in tomorrow’s post. I chewed on a Sludgie (Blended Kale stems, Celery, Carrots, Banana, Cacao Nibs, Apple, Peanut Butter in Water) while I worked.
