Brunch: Any day that starts with a cup of Teeccino topped with Soy Milk Foam and dusted with Cinnamon has to be a good day.
And then Gary started making a variation of his Baked No-Egg Omelette adding in Roasted Red Peppers, Herbs and sustituting Spinach for Kale. I joined in the fun and made Corn Bread – adding in chopped Green Onions and Pecans. It may have been the best corn bread ever.
Dinner: We were feeling a little lazy when dinner came around. We put out the Corn Bread and remaining No-Egg Omelette and had bowls of Almond Yogurt with fresh Berries.
