Breakfast: Our Corn Bread lasts a few days and makes breakfast easy.

We didn’t finish the Steel Cut Oats yesterday. Storing our food in Pyrex bowls makes food prep faster and easier too. I unmolded the Oats on a plate and it was ready to go. We sliced it up and served it with desired toppings. I went with Yogurt and Gary added Maple Syrup.

Lunch: Everyday is all about food at Responsible Eating And Living headquarters but Tuesday takes the cake, with the It’s All About Food radio show. I got ready for the day’s guests with a quick stew made with precooked Black Beans, precooked grains – Millet/Brown Rice/Red Rice, Porcini Mushroom Powder. I seasoned it with Marjoram, Summer Savory, Tumeric, Onion Powder and Garlic Powder. I took a small bowl of Sauerkraut too.

Dinner: Gary asked what I would like for dinner. I was being smart and said “steak and potatoes”. That’s what I got! Baked Herbed Tofu Steak with Baked Potatoes, Kale with Onions. I topped the potatoes with Almond Yogurt, which is like sour cream, and mustard. Organic potatoes are so flavorful. Every bite was delicious. The Baked Tofu was the best ever, made with lots of herbs and garlic and lemon juice.

Evening: We live simply here at Responsible Eating And Living headquarters. People often say that eating organic is expensive. We do not make a lot of money, but almost everything we eat is organic. Quality, nutritious food is a priority. I’ve been practicing “I’ve Got the Sun In the Morning and the Moon at Night” from Irving Berlin’s Annie Get Your Gun. It’s part of a cabaret act I am preparing. Every time I sing it, I feel it, because it is true. I am grateful for what I have. I would only change the lyrics a little bit to “I got the Sun in the morning and Teeccino at night.” When Gary makes me a rich cup of Teeccino topped with Soy Milk Foam and Cinnamon, I’m all right.
