What Vegans Eat – Day 980, Travel Edition

Breakfast: The air here in the San Jose area is clearing! It’s good to breathe. For breakfast, we had Oatmeal with Apples, Raisins and the special treat ingredient – Dry Roasted, Unsalted, Organic Peanuts.

Lunch: Gary was out most of the morning at meetings regarding our upcoming production of The Music Man. He came back to this gorgeous lunch, Mixed Baby Green Salad with Rainbow Fingerling Potatoes and Tahini Dressing, topped with Black Beans and Guacamole.

Snack: Let the auditions begin! We had our first of two audition nights for The Music Man. Our producers, Barb and Katie are very nurturing and often bring snacks for us. Barb brought Veggie Maki, Hummus and Blueberries. I devoured the berries.

Dinner: Back at the pool house we had a late dinner. There was nothing I wanted more than our simple soup, made with low sodium Vegetable Broth, Tofu, Onions, Kale, Tahini and Lemon. This time we added Garbanzo Beans too. It’s comforting and nourishing.
