What Vegans Eat – Debut

kale-with-tempehI have been asked so many times, “what do you eat?” Five years ago I did an IT’S ALL ABOUT FOOD SHOW entitled “A Week Of Eating Vegan” where I kept a journal of what I ate all week and spoke about it on the show. I have received a lot of great feedback on that show over the years and decided to make it a habit to post what I eat. So here goes!

Today’s menu was very simple. I was working a lot and felt pretty full from a lot of hearty eating the day before. Everything is organic.

Breakfast: Cold rolled oats with flaked coconut, sunflower seeds, flaxseeds and unsweetened soy milk (a variation of this can be found here) and mixed berry tea.
Daily Green Juice was made with kale, collards, lemon, celery, beets and watermelon radish
Lunch: Kale Salad with Spicy Braised Tempeh Strips and Seed Caesar Dressing
Dinner: Simple white cannellini beans with fresh lemon juice
Evening: Peppermint tea
