Everybody loves mashed potatoes, but try this Smashed Cauliflower recipe. It tastes just as rich and comforting.
Ingredients
2 medium heads of cauliflower or 1 very large head.
1 large red onion, quartered
2 bulbs of garlic
1 cup unsweetened soy milk or other nondairy milk
1/4 cup nutritional yeast
Preheat oven to 350oF
Take the heads of cauliflower, remove the greens and the core and separate the florets.
Roast the bulbs of garlic along with the onion in an oven proof dish with a cover. Let cool.
Steam the cauliflower florets in a large pot with a tightly fitting lid in 1 to 2 cups of water until tender.
After the cauliflower is steamed, drain the water and return to the pot on low heat. Continue cooking the cauliflower until all of the water has evaporated.
Squeeze the roasted garlic from the bulbs into the cauliflower.
Add the roasted onion to the cauliflower.
With a potato masher, smash the cauliflower, garlic and onion together with soy milk and nutritional yeast. It should look like mashed potatoes with chunks of onion and roasted garlic.
Add salt and pepper to taste.
Put the smashed cauliflower in an ovenproof baking dish covered with a piece of parchment paper cut to the shape of the baking dish. Bake for 20 minutes. Remove cover and bake an additional 10 minutes or until the top is lightly browned.
You can skip the baking step and serve right after you’ve smashed them if you prefer.
