Cooking with fruit can be surprisingly sweet. I like the combination of the sweetness from the fruit and smoky chipotle.
1/2 cup water
1 pear, cut in small pieces
6-8 dried figs, chopped in small pieces
1/2 teaspoon madras curry powder
1/2 teaspoon chipotle powder
2 cups cooked adzuki beans or other small black, red or pink bean
In a large saucepan over medium heat, cook the pears and figs with the spices in water. Stir frequently to make sure the fruit does not burn. Cook over low heat for about 20 minutes or until fruit is soft and water is absorbed.
Stir in beans and spices and cook until beans are hot.
Serve immediately.
