What Vegans Eat – Day 1010


Breakfast: My dad spent the night at the hospital. I was planning on going back to the hospital as soon as I could. I called my dad at 9am. He didn’t answer the phone. I left a message telling him I would be there soon. I was scrambling to get some work done before I left. At 10am my dad called me and asked where I was. I felt bad. I got my things together to leave. Meanwhile Gary was making me a hearty breakfast of Tofu Scramble and Home Fries. I took one forkful and then packed it up to take with me. I was on my way.
Dinner: It was another long day. My mom’s dear friend Edythe brought her to the hospital.
Mom and Edythe had both brought me food. When I got hungry I was grateful to have things to eat. Mom brought some Dr. Praeger California Veggie Burgers for me that she cooked in a frying pan.
Edythe made me a Roasted Red Pepper and Avocado sandwich.
Mom and I stayed a long time at the hospital and then I took her to her home about 9pm. I was staying over. She made me a cup of decaffeinated black tea with lemon. When being a caregiver it is easy to forget about your own needs. The tea was a cup of simple comfort.
