What Vegans Eat – Day 1017

It’s Thanksgiving Day. We had not made any plans for this day since dad was ill and we didn’t know what was going to happen. Since he died yesterday morning no one in the family was in the mood to celebrate. Tomorrow is the funeral and burial and people will be coming over my parents’ home afterwards. When the going gets tough, some of us tough guys cook. I began to make desserts to bring tomorrow. I started with Apple Pie. I made this one a little differently. My pies are always vegan and often gluten-free. Now I wanted to make this apple pie sugar-free and flour free. The crust was made with Walnuts, Almonds, Oats and Dates. Slicing the apples can be a meditative experience.

I also made a Pumpkin Pie that was free of refined sweeteners and flour. I will post the recipe soon. The last dessert I had to make was Lemon Meringue Pie. This one had vegan sugar in it and the crust was made with Gluten-Free Flour.

When I was finished Gary got starting making four kinds of Baked Tofu, Garlic Hummus, Crudités, a vegan Blue Cheese Dressing, Baked Small Potatoes, Baked Sweet Potato Fries and Creamy Pesto.
 
Dinner: We nibbled all day on the foods we were preparing. For dinner we sat and ate a simple salad of Greens, Garbanzos and Tahini Dressing.
