What Vegans Eat – Day 1018

Breakfast: I need to be strong to get through this day. Green smoothie to the rescue with Kale, Peanut Butter, Cacao Nibs, Chia Seeds, Bananas and Blueberries. I made a lot and froze two portions for later.

Dinner: When I interviewed Lori Robin about her vegan cheeses, she gave me a lot to bring home. Gary and I thought we would serve them for Thanksgiving. Since dad died the day before Thanksgiving and we didn’t celebrate the holiday we still had the cheeses. We brought them to share after the funeral.

I set out my pies – Apple, Pumpkin and Lemon Meringue.

Whenever my mom had company or was invited to a holiday meal she prepared a platter of fresh fruit. Now a new widow, we had the fruit prepared and brought in. Hopefully mom will be up to making her fruit platters again soon. They are the best. The one here was pretty good with Pineapple, Melon, Grapes, Strawberries and Oranges.

We set all the Vegan and Gluten-free foods to one side of the table. We had Gary’s Garlic Hummus, Baked Tofu, Baked Sweet Potato Fries, Small Baked Potatoes, Crudités and Olives. One of our friends brought Vegetable Maki.
