What Vegans Eat – Day 1043, Travel Edition


Breakfast: I awoke a lot earlier than Gary. We are staying in the basement apartment at his sister’s home. I didn’t want to disturb Gary while he slept but I was hungry. I discovered some Celery in refrigerator and quietly dipped it in the bottom of Peanut Butter jar, scooping out the little that remained. When Gary got up we made our breakfasts of Rolled Oats, Apples, Dates and Bananas with fresh Orange sections.
When I was ready for lunch, I made the simplest plate of Corn Tortillas, Black Beans and mashed Avocado and ate it cold! I didn’t even bother to warm it up.
Dinner: Before our evening rehearsal we each had several servings of the big Salad, with Baby Greens, Cherry Tomatoes and Tahini Dressing.
Evening: We are always hungry after rehearsals! Neither of us wanted to make anything and we just noshed while we did a little desk work, with Apples. I needed more and sliced up a little plain, firm Tofu and dipped it in Tahini Dressing. That was all I needed.
