What Vegans Eat – Day 106


Breakfast: I was so inspired by Jessica Nadel’s blogpost yesterday with her Peanut Butter Milkshake Smoothie recipe. When I saw it, I had to have it. I do have a problem following recipes exactly and I did not have all of the ingredients so I came up with my own. Thank you Jessica for the inspiration! Here is my Peanut Chocolate Smoothie recipe.
Daily Green Juice: Kale, Collards, Celery, Carrots, Lemon
Lunch: Yesterday’s Sunny Pesto Pasta made lovely leftovers for lunch at my desk.
Gary added his Sunny Pesto Paste to his polenta for this dreamy, comforting dish.
The polenta paired well with a simple vegetable bean soup.
