What Vegans Eat – Day 1062, Travel Edition

Breakfast: Over a week ago I had root canal and unfortunately I now have a sore jaw – lockjaw, or trismus. It makes eating difficult and I am hoping it doesn’t last long! Plus, since we are not at home, we are not eating a wide variety of food where we are staying. We keep things simple. I made this salad for breakfast even though it was hard to chew.

 
Lunch: I opted for some softer food at lunch – Black Beans with Tahini Dressing and Corn Tortillas.

 
Evening: Cooked Red Lentils are the ideal food for me right now. They are soft and go down easy without any uncomfortable chewing. Still, it’s hard to open my mouth wide enough to get the spoon in. I am eating very slowly, with small bites.
