What Vegans Eat – Day 109

Brunch: We were pretty full from the big dinner the day before so we waited to eat and had a brunch with kale salad with pesto polenta crumbles.

Daily Green Juice: Kale, Collards, Celery, Carrots, Lemon
 
Dinner: We wanted the birthday celebrating to continue and we had the neighbors over for a day-after-birthday-party. Gary made Chickpea Flour Flatbread with sautéed vidalia onions on top. We had some sweet sliced melons, a dip and crudités and a nachos bar with melty vegan cheese, a mango salsa and corn chips.

Gary and I made the birthday cake. It was a yellow cake with peanut butter filling and shiny chocolate icing.
