What Vegans Eat – Day 1109

Brunch: We’ve been home a few days now and the celebration continues. Gary had wanted to make his Spinach Frittata while we were in California but there never seemed to be the right time or place to make it. I requested one this morning. It’s a beautiful way to start the day. You’ll have to ask Gary how he made this one. I think it was a cross between his Baked No-Egg Omelette and this Frittata recipe.

 
I love when Gary starts frothing… his Soy Milk.

 
Dinner: It’s fun to discover what’s been tucked away in the freezer. Gary found 5 big quart-sized jars he stashed there months ago, right before we left for California, of the Whatever-Beans-We-Have-Left-In-The-House Soup. We topped our bowls with nutritional yeast and had seconds along with Celery and Carrot sticks, and a Power Greens Salad with Tahini Dressing.
