Breakfast: We were running out of coconut milk and didn’t have any backup soy milk in the house. Gary made some oat milk and mixed it with the rest of the coconut milk to put on our oatmeal cereal with was topped with peanuts, figs, bananas and flax seeds.
Daily Green Juice: Kale, Collard, Celery, Carrot, Lemon
Lunch: Getting our greens on with a kale and collard green salad.
Dinner: We were going on a trip the next day and would be away for awhile. We were tired after packing and finishing up last minute details before leaving. We ordered in from our favorite neighborhood restaurant, Simple Veggie and had Sautéed Chinese Broccoli, Veggie Spare Ribs, Hot Pot with Veggie Meatballs with Brown Rice.
