What Vegans Eat – Day 1153

Breakfast: We got to bed late last night after being on our feet all day preparing food. I got up early to finished typing up the recipes for the dishes we prepared to share at the Food Revolution Summit. You can register for the summit here. Today was the 11th Annual Veggie Pride Parade. REAL would be exhibiting and I was one of the speakers. I prepared and bottled a mint tea for Gary and a Yerba Maté for me and we both got to sip on what wouldn’t fit in the bottles before we left for the event. I packed a smoothie made with Coconut Milk, Blueberries and Spinach; Millet Croquettes; Apples and Oranges to eat later.
 
Lunch: The Millet Croquettes traveled well and tasted great.

 
Dinner: After the event we went to the after party at the Vspot for food and a comedy show. The buffet included a Kale and Quinoa dish, Empanadas, Spring Rolls, Fried Avocado and Tortilla Chips and dips. We were told all the comedians were vegan! It was a fun night and it felt good to laugh a lot.

 
Evening: We have really not been eating much at all! When we got home we dug into the food we prepared yesterday and chose the Red Cabbage Salad with Lemon Mint dressing and the Garbanzo Bean Corn Chowder.
