What Vegans Eat – Day 1240, Travel Edition – Bay Area, CA

Breakfast: It’s a special day. Yes, it’s Independence Day but it’s also Gary and my anniversary. We met doing a musical together in 1990 and reconnected 12 years ago on this day. We haven’t stopped talking since. We prepped some foods for a celebratory brunch, starting with Avocado, Red Onions and Tomatoes while we ate fresh Strawberries.

 
This is my version of the Bagel and Cream Cheese, Corn Thins topped with Avocado, Almond Ricotta, Tomato and Red Onion. It’s a favorite food combination for me.

 
Gary always goes for the sweeter options for breakfast and he put Peanut Butter and Bananas on his Corn Thins. After my savory plate, I copied Gary, only I used Walnut/Cashew Butter.

 
Dinner: Gary’s sister invited us for a July 4th gathering and she was very thoughtful to have plenty of food for us two vegans, starting with Olives. These were yummy.

 
And there’s always Hummus which goes well with crunchy Crudités.

 
There were many interesting dishes to try: Roma Beans, Corn on the Cobb, Chili and Rice, Cucumber Salad and Tomato Salad. Plus Gary brought along Baked Tofu.

 
The fresh fruit was perfect for dessert: Strawberries, Peaches, Cantaloupe,

 
And there was Cashew Ice Cream too which we had to try. It was a good day of eating!
