Breakfast: It was time to treat Gary to a nice breakfast – Cheese omelets! Our vegan version of course with Garbanzo Bean Flour Crepes and Almond Ricotta Cheese Filling, served with Melon.
Dinner: For our evening meal we were both in the mood for Mexican food. Or the clean, vegan version with simple beans, rice and guacamole. Where could we go? We went to the local grocery store, Sprouts Market and picked up some Black Beans, Cilantro, Green Onions, Avocado, Tomatoes Corn Tortillas and Avocado. We were surprised and happy to find all organic items. I chopped the tomatoes, cilantro and onions for salsa and prepared the guacamole. Gary prepared a simple Black Beans, Onions and Rice dish. Our plates came together beautifully along with Greens and Almond Ricotta Cheese, served with Water with Lemon.
