What Vegans Eat – Day 1241, Travel Edition – Bay Area, CA


Breakfast: I couldn’t wait to repeat yesterday’s breakfast again today: Corn thins with Avocado, Tomato, Almond Ricotta and Red Onion served with fresh Strawberries.

Dinner: We moved today. We left my friend’s home in Sunnyvale and moved to an apartment in Campbell we are renting for the month of July while directing Into the Woods. After packing and cleaning up in Sunnyvale and unpacking in Campbell we were ready to relax and treat ourselves to dinner. Downtown Campbell is very close, about a 5-minute walk from where we are staying. We decided to check out the new ‘hood’ and stopped at Sushi Confidential for dinner. They have a vegan menu!

Gary ordered one of the Rolls. I think he was disappointed with his choice and it wasn’t very filling.

I chose the Donburi Rice Bowl with Avocado, Daikon, Tofu, Wakame, Cucumber, Kaiware Sprouts,
Carrots, Ginger, Sesame and Nori.

Back in our new digs, we had fresh Strawberries for dessert.

Evening: It was a long day. I had some Corn Thins with Walnut/Cashew Butter before getting ready to call it a night.
