What Vegans Eat – Day 1249, Travel Edition – Bay Area, CA

Every day should be a celebration. But we often get wrapped up in the routine of life and sometimes forget what we are grateful for. I realized in the morning that this was the eleventh anniversary of my third (and last) cancer surgery. I have been cancer-free for eleven years. This is something to celebrate.
 
Lunch: We had a very good rehearsal with the teen cast in the morning and I was ready for some celebratory nourishment at 1pm. I had cooked Red Quinoa and Red Lentils with Microgreens, a Tomato and a Yellow Potato.

 
Dinner: We don’t have an evening rehearsal on Fridays. I wanted to get home and make a nice meal. I had it all planned in my head so that when I started prepping it didn’t take very long to complete. I made Buckwheat with Walnuts, Round Zucchini filled with a quick Ratatouille Filling made with Tomatoes, Eggplant, Red Pepper, Zucchini and Onion. I added in some chopped Kalamata Olives too. Gary made the Salad.

 
Evening: After dinner we met Gary’s cousin Nancy and her husband Wade in downtown Campbell. We stopped at Tessora’s Barro di Vino and sat at an outdoor table. I chose the Ninkasi Vanilla “Oatis” Oatmeal Stout from Oregon.

 
Downtown Campbell is always hopping. After Nancy and Wade left, Gary and I stopped at the Campbell Creamery to see if they had vegan ice cream. They had a few flavors of Vegan Sorbet and a Disneyland Dole Pineapple Whip made with Coconut Milk and Pineapple. I chose the Lemon Sorbet and Gary had the Pineapple Whip. It was fun night out!
