What Vegans Eat – Day 1278


Lunch: We’ve been home four days and have not quite gotten back to normal. Often the time after an intense rehearsal and performance period can be exhausting and depressing. We were both feeling heavy today and I just felt like I couldn’t catch up, nor did I have the energy to do so. Still I followed my to-do list with what I had planned for today. Gary had a rehearsal for a new show in Manhattan. I made him a pot of Peppermint Tea in the morning but he left without having any. I didn’t eat until about 2pm when I had some fresh Figs. Delicious.

Later when Gary came home he made us Romaine Lettuce Salads that we ate on the terrace. I served the Peppermint Tea, now cold, that I made this morning.

Dinner: All of a sudden around 8pm I found some energy and decided to prepare a new recipe I am working on for Baked Zucchini Fries. Gary made a recommendation about the sauce. I whipped up a quick one based on his ideas from the Tahini Lemon Dressing we had by adding Parsley, Cumin, Turmeric and Hot Sauce to it. I was very pleased with all the results. This was dinner!

Afterwards I made us Raspberry Banana Coconut Milk Smoothies.
