What Vegans Eat – Day 1281

Breakfast: There is lots of kale in the house. I put a big head in the Vitamix and started blending. We had some Coconut Milk so that’s what I blended it with. Then I added Flax Seeds, Bananas and Blueberries. I couldn’t finish it all and poured the rest into two containers which I froze for another day.

 
Lunch: More Kale for lunch, this time as a chopped Salad.

 
Dinner: Yesterday’s dinner makes great leftovers today: Marinated Tempeh, Baked Fries and Roasted Cabbage.

 
Gary carved up this Orange and presented it to me as a beautiful dessert.
