What Vegans Eat – Day 1292

Breakfast: The morning meal was a mix of last night’s leftovers – Blueberry Corn Bread and Red Lentil Soup.

 
Dinner: My sister and her son came up from Florida for the weekend. We have a big family event to go to tomorrow and it will be my mom’s 85th birthday. We met for dinner at Harbor Mist in Cold Spring Harbor. My sister picked it because of the beautiful atmosphere located right on the water. She also checked the menu to make sure we could find some vegan foods to eat. When we asked the server he was happy to make us these gorgeous Vegetable Plates with Broccoli, Carrots, Zucchini, Escarole and White Beans.

 
Evening: Later on back at home Gary and I had our Green Juice with Kale, Collards, Carrots, Celery and Lemon. Then I ate an Apple. We finished with Corn Tortillas with Avocado. Gary found these organic Corn Tortillas recently at Whole Foods. They are made locally in NYC and they are yummy.
