What Vegans Eat – Day 1296

Breakfast: It’s quite hot and humid this week and we have not broke down yet to turn on the AC. We had a refreshing mono meal of Cantaloupe for breakfast.

 
Lunch: I kept lunch cool and we ate on the terrace. We had a big Salad, Steamed Cauliflower, a cheesy spread made with cooked red Lentils, Nutritional Yeast and Miso, and Corn Tortillas. We each had our Green Juices with Kale, Collards, Carrots, Celery and Lemon.

 
The salad was gorgeous with Purple Sweet Potatoes and Cherry Tomatoes.

 
Dinner: We had more Cantaloupe for dinner.
 
Evening: Did I say it’s hot? We had a favorite snack of Corn Thins with Peanut Butter and Apricot Butter. We are very frustrated that Whole Foods doesn’t sell corn thins anymore. Not since they were bought by Amazon. The conspiracy has begun. I even heard that they’re selling Cheerios! Say it isn’t so! This store is going downhill. We get our Real Foods Organic Corn Thins by ordering them online at Vitacost. Thank you Vitacost!
