What Vegans Eat – Day 1300

Breakfast: Good morning. Gary’s feeling a little under the weather. I think I am fighting something too. Still I was motivated and make a nice late breakfast. I selected the Garbanzo Bean Flour Waffle recipe in our REAL recipe collection. I modified it by adding Flax Seeds, Sunflower Seeds, Pumpkin Seeds. The recipe already calls for Tahini so I am calling this the Four-Seed Waffle. I made a coulis with Raspberries, Strawberries and Bananas for the waffle topping. Delicious.

 
Gary made a mountain of Soy Milk Foam. Foam is fun! Especially on top of hot beverages.

 
Lunch: We are both feeling bad. How did we succumb to getting sick? I made a broth soup with Celery, Carrots, Garbanzo Beans and Potatoes. Everything was already cooked or chopped so it was easy to cook everything together in water with some added herbs and spices. I finished the salad we had made the day before yesterday. It was good and had not wilted.

 
Evening: We have some recipes to finish to contribute to a cook book. Despite feeling low on energy, Gary pushed himself and made his Classic Italian Marinara. Lunch was late and we skipped dinner. I took a small bowl of sauce. It’s yummy, like a thick tomato soup. Afterwards we had Apples, Bananas and a little Peanut Butter.
