What Vegans Eat – Day 1312

Breakfast: I am taking a day off from working to visit with mom. I made a pot of Maté and sat sipping tea while catching up on emails and other small tasks before leaving.
 
Lunch: I like to take mom to the Cheesecake Factory for lunch. I always get the Vegan Cobb Salad and hoped she would too. She did! She loves eating salad but is not motivated to do the chopping at home. I felt like a tornado. I stopped by CVS to pick up mom’s medication refills. Then I got to her house and fixed a leg on her patio table and went through some paperwork. Afterward we went to lunch. She was tired but I dragged her to Trader Joe’s. I left her in the produce section as I raced through the isles getting her what she needed. We were out of there pretty quickly. I took her home and made it back before 6pm so there were a few parking spots to choose from. It’s a good day when you find a parking spot quickly.

 
Dinner: Dinner was spectacular! We had Gary’s Garlic Mashed Potatoes and the Tofu Quiche he made yesterday along with Black Beans and a Kale Salad with Onions, Pumpkin Seeds and Olives.

 
Evening: It was late but I felt like a treat. I made us a soft serve dessert with blended frozen Strawberries with frozen Bananas, water, Cashews, and Almond Extract.
