What Vegans Eat – Day 1341

Breakfast: Today’s tea is Genmaicha. It’s a favorite and seems so right for autumn in New York.
 
Lunch: It’s a beautiful day with a slight chill. We put on our sweaters and ate out. Out on the terrace, of course. I warmed up the leftovers from yesterday, plus the Spaghetti Squash I had baked, the Adzuki beans I had cooked and some Bionaturae Organic Strained Tomatoes I heated up. I put it all out on the counter and called it the REAL Cafeteria. We each got one Buckwheat Crepe that was remaining from yesterday, plus some of the No-Egg Omelette, and Home Fries.

 
Dinner: Gary warmed up all the remaining leftovers but he made me a treat. It may look like a smiling pile of poo, but it’s not! It’s a delicious mound of Spaghetti Squash topped with a pesto he made with Kale, Walnuts, Basil, Garlic and Dried Black Olives. I love pesto and this one was the best ever! It’s very filling and I look forward to another serving tomorrow.
