What Vegans Eat – Day 1342


Breakfast: The day began with tea. Tea and meditation. The way I like to start. Today’s tea is Jasmine.
Lunch: I warmed up the leftover Spaghetti Squash with Walnut/Basil/Olive/Garlic Pesto. Gary was making Oatmeal but decided to leave the Oats out and just enjoy the Apples he chopped and mixed with Raisins and Pumpkin Seeds. Afterward I had a favorite, Celery with Peanut Butter.

Dinner: I was not planning on visiting Mom today but she was struggling with her new computer and I had a few ideas how to set it up and make it easier for her. So I was off. After spending many hours there, I was happy to get a parking spot at home. Gary had a delicious dinner all ready for me: Tricolor Quinoa, Baked Yellow Potatoes, Sautéed Collards and Kale with Tomatoes and the rest of the Walnut/Basil/Olive/Garlic Pesto which I could put on anything.

The Adzuki Beans I had cooked a few days ago became a hearty stew with juicy, sweet bits of Corn.
