What Vegans Eat – Day 1344

Breakfast: Today began with Genmaicha. I drank my tea and prepared a little for my radio show in the afternoon. I had invited a woman from yesterday’s Vegan Lady Boss Meeting to be my second guest and I needed to get all my social media postings out.
 
Lunch: At lunchtime, we had our first meal. Waffles again? Yup. We love them and they are so easy to make. I dug into the REAL recipe collection and made Fruity Waffles, an old favorite.

 
We schmeared them with Apricot Butter and Sesame Tahini. Is there anything better than this?

 
Dinner:
We haven’t been eating a lot. When dinnertime was coming around we were ravenous and we feasted. First, a cocktail. Green juice with Kale, Collards, Celery, Carrots, Lemon and loads of Ginger.

 
We began with beautiful Green Salad with Figs, Black Wrinkled Olives and Pumpkin Seeds topped with a Balsamic Tahini Dressing. Gary created Millet Pesto Balls from cooked millet and pesto sauce he had made a few days ago. These were amazing!

 
Gary’s the king of Baked Tofu. He is now marinating them with Balsamic Vinegar and Apricot Butter. They are SOS-free, salt, oil and sugar free. The balsamic gives it the “salty” taste and the apricot butter adds the sweetness.

 
We had Sweet Potatoes too. Our hungry has now been satisfied.
