Breakfast: There was one Steel Cut Oats and Millet Waffle left and I was the winning recipient. Gary had Corn Thins. We shared the same toppings – Apricot Butter, Peanut Butter along with Sliced Apples.
Dinner: Dinner was another beautiful celebration with a tasty stir fry made with Bok Choy, Rice, Garlic, Onions, and Kalamata Olives. I love anything with Olives! We also had Yellow Split Pea Soup, Millet and Porcini Mushrooms for me.
Evening: In the evening Gary baked some Purple and Orange Sweet Potatoes. We kept remarking how amazingly delicious they are. The purple ones especially have a rich, dense, wonderful flavor.
I had some more Yellow Split Pea Soup, topped with Mushrooms.
