What Vegans Eat – Day 1411

Lunch: The weekend has begun. I decided to make Vegetable Corn Cakes. We haven’t had these in a while. I put Corn in the batter in place of cooked Carrots and Onions as in the recipe. They make a mighty stack.

 
We set the table with sweet and savory selections. Sweet for Gary, savory for me. A cooked Blueberry and Banana compote and Peanut Butter Cream were Gary’s choices.

 
I chose the Pumpkin Seed Spread, Black Beans and chopped Tomatoes with Shallots. We went several rounds. It was fun.

 
Dinner: It’s the holiday season. I did a little work in the morning then took a nap listening to “Live at the Met” on the radio. It wasn’t really live today, it was a recording from October of Puccini’s La fanciulla del West which didn’t matter and was not noticeable on the radio. It felt “live” in our living room! Then we were spontaneous and got on the train for Greenwich Village. We ate at the Urban Vegan Kitchen. It was so much fun! We had a window seat and grooved to the Dope music and atmosphere. Gary had a beer and I ordered a Bulleit Burbon with fresh Ginger.

 
We both chose the Urban Macro Bowl. It looked like the cleanest choice on the menu with Tempeh, Roasted Carrots, Kale, Quinoa and a Cashew Beet Cream. It was very good.

 
We were still hungry. So instead of dessert, we ordered a couple of small plates: Chile over Rice and Fried Plantains. That hit the spot.

 
Evening: We finished the evening with Teeccino. I was a little decadent and had a spoon of Soy Ice Cream in mine. Happy Holidays.
