What Vegans Eat – Day 1420

Breakfast: Last night I slept at my mom’s house. I was up really late catching up on my work. I had to wait for her to go to sleep before I could start working. She was very chatty to day. It reminded me of when I was in high school. I would wait until everyone was asleep before starting my calculus homework. I needed complete quiet to do that work. And back then, I didn’t need a lot of sleep. I woke today feeling exhausted. I tried to sleep in but I couldn’t. I finally got up and made Steel Cut Oats with Apples, Blueberries and Raisins.

 
We didn’t finish the frozen treat I made last night and today it was a berry smoothie. I shared it with mom.

 
Lunch: Like I usually do when at mom’s, I made soup. This is the way I get her to eat more vegetables and beans. Today’s soup had Carrots, Celery, Onions, Potatoes, Corn and Cannelli Beans. I added a bottle of beer to the water and seasoned it with Garlic Powder, Turmeric, Oregano, Dill, Rosemary, Fennel and Black Pepper. I wasn’t hungry when it was ready but mom was. I took a small bowl so that mom would have company eating. I filled seven large jars of soup for her, half for the refrigerator, half for the freezer.

 
I got home and made a soup for me with Cooked Millet, Pinto Beans, Porcini Mushrooms and the maki dip Gary had made a couple of days ago with Tahini, Balsamic Vinegar and Apricot Butter. It may sound strange but I liked it.

 
Dinner: It’s New Year’s Eve. Gary and I were supposed to go to a party in Pennsylvania tonight but we canceled when he had to go to California to be with his dad in the hospital. So I am having a simple evening. There were a couple of cooked Purple Sweet Potatoes in the refrigerator. I sliced them up and toasted them in the oven. I ate them slowly as I worked on my computer.

 
Evening: A couple of hours before midnight, I finished the open bottle of Samuel Smith Chocolate Stout. I drink one small glass and that’s enough. Cheers everyone. Happy New Year!

 
Feeling hungry and hour before midnight, I made a big Kale Salad with Carrot Ginger Dressing, Walnuts and Olives. This bowl holds 5 cups! That’s a good salad. I had the television on with the sound muted. The evening’s announcers sounded idiotic, no matter what station I was on. I waited for the ball to drop. Then I spoke to Gary who was at his brother’s home in California having a little celebration there. Now on to 2019.
