What Vegans Eat – Day 1426

Breakfast: After a long day of home projects yesterday I was grateful to sleep in a bit. When it was time for nourishment I finished the Black Bean Tomato Vegetable Stew I had made for dinner last night.

 
Lunch: I am in a bit of a fog today. I am noticing a pattern. I push really hard one day and the following day I am burned out. Today I will rest, at least until I meat my friend Beth for dinner tonight. She’s visiting from Costa Rica. I made a new stew with Tempeh, Tomato Sauce, Red Onions, Celery, Ginger and Cilantro. It was a combination of flavors I don’t typically put together but I was happy with the result.

 
Dinner: The temperature is dropping fast today. I bundled up and met Beth in Manhattan on the upper west side. We walked quickly to the Seasoned Vegan, a restaurant in Harlem that I had been wanting to try. The atmosphere was lively and cozy. We both tried dishes with Burdock Root. I got the “Crawfish” in Garlic and Basil Sauce with Rice and Broccoli.

 
Beth got the Po’ Boy Sandwich with fries, featuring Burdock Root as well as “Crawfish”. I was fascinated with the Burdock Root texture, and the seasonings for both our dishes were excellent. My usual complaint for restaurant food is it’s too salty and too oily and this place was not any different. I am inspired now to experiment with burdock root.

 
When we got back to my apartment I invited my friend Janet over. Janet told me she’ll be taking a trip to Costa Rica soon and I thought it would be nice for her to meet Beth who lives there now. I cracked open the box of Sjaak’s Chocolates Gary and I were gifted in December and made a pot of Teeccino. They paired well together with our conversation on Costa Rica.
