What Vegans Eat – Day 1429

Since I don’t eat at normal hours, I am changing the format here. Instead of Breakfast, Lunch and Dinner and I am going with First Meal, Second Meal Third Meal and so on. Let’s see how this goes.

First Meal: My first meal came at 10:30am, a bowl of cubed Papaya.

 
Next I had a big bowl of Black Beans, cooked with Cilantro and topped with Almond Ricotta and raw Red Onions.

 
Second Meal: My friend Beth from Costa Rica invited me out to meet for dinner. I met her at a yoga studio at 5:30pm where she had just taken a class and we walked to Candle West. It’s simply the best. We began with juice. I always get the Green Goddess (mixed Greens, Lemon, and Ginger, no Apple) I enjoyed every sip and told myself that I wanted to get back into juicing again soon. Beth, who had a cold, ordered the Flu &Cold Fighter with Ginger, Orange, Grapefruit, Carrot, and Lemon.

 
We shared two plates. The Cornmeal Crusted Brussels Sprouts with Almond Cheese and Lemon was one plate. It was a great dish to share and have with good conversation.

 
Crystal Rolls with Pickled Cucumber, Avocado, Asian Pear, Red Cabbage and Spicy Peanut Sauce was the other.

 
We chatted a long time and ate slowly. We didn’t think we wanted anything else but after talking with the manager, Benay, she easily convinced us to get the Golden Latte with Tumeric, Coconut Sugar, Ginger, Black Pepper, Vanilla, Pink Salt, Cayenne Pepper and Almond Milk.

 
Third Meal: When I got home I had a tofu craving! Fortunately it was an easy thing to fix. I sautéed some Red Onion in a saucepan, adding in frozen Spinach, Cilantro and cubed, sprouted Tofu.
