Breakfast: Our second breakfast at home since we got back from our month-long trip in California and we are settling in with our breakfast favorites. This morning I made a stack of Sourdough Cornmeal Pancakes filled with plump, fresh blueberries and topped with a coulis of frozen blueberries and bananas that we had on hand which were cooked up together in a saucepan and blended until creamy.
I like mine blueberry-side-up.
Daily Green Juice: Now that we are back home, it was time to make green juice. Gary went out and bought the essentials and I rolled up my sleeves and got juicing. I made 6 glasses with Kale, Collards, Lime and Celery. We each drank one and froze the other 4 for the upcoming days. It was thick and strong and green – the way I like it!
Dinner: Still more REAL favorites to come. Gary made his classic Baked Tofu and put together an amazingly beautiful and delicious salad with avocado, tomatoes and Romaine lettuce, tossed with Little Seed Caesar Dressing and the remaining roasted cauliflower from the evening before. We shared a bottle of Blue Moon Beer to go with it.
I had soaked and cooked up pink lentils earlier in the day. I love this variety that cooks up super fast and fluffy. With onions, herbs, wine and miso, Gary made one of the best lentil soups I have EVER had.
